Coconut milk is a fantastic ingredient to add to your smoothie. As we’ve talked about before, coconut milk offers some tremendous health benefits. Coconut water and oil are great too, but my personal favourite is the milk. A few nutritional highlights include: it’s lactose free, contains several antioxidant compounds which help fight harmful free radicals in your body, provides around 22% of the daily value for iron, making it an ideal choice for anyone with low iron or even anemic issues, and it also contains lauric acid which is known to help protect the body from infections and viruses.
Refreshing Blueberry Coconut Milk Smoothie
3/4 cup water
1/2 cup coconut milk
1 frozen banana
1 cup blueberries
1 tablespoon raw almonds
1. Combine all ingredients in a blender and blend until smooth.
This smoothie is sweet, refreshing, and absolutely delicious. It’s a great way to fit more coconut milk into your diet and reap the benefits of this amazing ingredient. It’s a very thick, creamy smoothie, which I love, but if you want to make it a bit thinner, just add 1/4 cup of water at a time and continue blending until it reaches the desired consistency.
