Quinoa Balls

We know quinoa is a superfood, super delicious and incredibly nutritious, and here’s a great recipe that focuses around this tasty grain.

Quinoa Balls

Ingredients:

1 cup quinoa
2 cups water
4 eggs, whisked
1/3 cup Parmesan cheese
3 spring onions, sliced
3 cloves garlic, minced
1/2 teaspoon sea salt
1 cup kale, steamed and chopped
1 cup breadcrumbs
1 teaspoon extra virgin olive oil

Directions:

1. Prepare the quinoa. Want to learn how to cook it perfectly? Learn how here.

4. In a large bowl, combine the cooked quinoa, eggs, Parmesan cheese, onions, garlic, sea salt, steamed kale and breadcrumbs.

5. Shape the mixture into small patties, just a couple of inches wide each.

6. Heat the oil in a large frying pan over medium-low heat. When the oil has warmed, put your patties in and cook on one side for about 10 minutes, or until lightly browned on the bottom. Flip and cook for another 10 minutes, to get the other side nice and brown as well. Set the patties on a cooling rack or piece of paper towel until you’re finished cooking patties with the remaining mixture.

Eat them as is, or top your quinoa balls off with some of your favourite toppings: avocado, cilantro, fresh lemon or lime juice, or some garlic oil would all work fantastic here.
