Edamame and Avocado Salad

Summertime is all about warm weather, relaxing in the sun, and hanging out with great friends. At the end of a long day of sun and fun, you don’t really want to spend a long time cooking a piping hot meal. That’s why quick, cold summer salads are so great.

Edamame and Avocado Salad

Ingredients:

2 cups edamame, cooked and shelled
1 cup green pepper, diced
1 avocado, sliced
1 lime

Directions:

1. Cook the edamame and shell it (unless you bought it pre-shelled, then you’re already good to go), dunk it in ice water for a couple minutes to cool it, then put it in a large bowl.

2. Add the feta and green pepper and mix everything together well.

3. Plate the salad, adding a few pieces of the sliced avocado over top.

4. Finish with a light squeezing of lime juice.

This simple summer salad is so delicious and nutritious, it just makes your body feel good. It doesn’t take a lot of time to do, so you can enjoy it and get back outside into the gorgeous summer weather. Add a side of homemade garlic bread or some sweet potato fries. You can also add lots of other yummy ingredients like corn, red or yellow peppers, or some zucchini for an extra bit of flavour.

If you’re a big avocado fan like myself, and you’ve got a craving for something sweet after, use the leftover avocado and a couple other basic ingredients and whip up a little plate of this yummy sweet treat.
